A vibrant appetizer with fresh strawberries, mint, and balsamic glaze on crispy baguette slices.

# What You'll Need:

→ Bruschetta Base

01 - 1 French baguette, sliced into 8 pieces
02 - 1 tablespoon olive oil
03 - 1 clove garlic, peeled

→ Strawberry Topping

04 - 1.5 cups fresh strawberries, hulled and diced
05 - 2 tablespoons fresh mint leaves, finely chopped
06 - 1 tablespoon honey or maple syrup
07 - 1 teaspoon lemon zest
08 - Pinch of sea salt
09 - Freshly ground black pepper to taste

→ Balsamic Reduction

10 - 1/4 cup balsamic vinegar
11 - 1 teaspoon sugar, optional

# How-To Steps:

01 - Preheat oven to 400°F. Arrange baguette slices on a baking sheet and brush both sides lightly with olive oil.
02 - Toast in the oven for 4-5 minutes, flipping once, until golden and crisp. Remove from oven and rub one side of each slice with the garlic clove while warm.
03 - In a mixing bowl, combine strawberries, mint, honey or maple syrup, lemon zest, salt, and black pepper. Toss gently to combine.
04 - Add balsamic vinegar and sugar if using to a small saucepan. Bring to a simmer over medium heat and cook for 3-5 minutes until thickened and syrupy. Allow to cool slightly.
05 - Spoon generous amounts of the strawberry mixture onto each toasted baguette slice.
06 - Drizzle with balsamic reduction and serve immediately.

# Expert Advice:

01 -
  • It comes together in under 20 minutes, which means you can actually make it on a Tuesday night instead of just thinking about it.
  • The strawberries stay bright and juicy instead of becoming jam, which was my biggest pleasant surprise the first time I made it.
  • Your guests will assume you spent way more effort than you actually did, which feels like a small victory.
02 -
  • If you toast the bread too far in advance, it will soften by the time you serve it—assemble these within 10 minutes of eating them, or they become sad and floppy.
  • The balsamic reduction will thicken more as it cools, so pull it off the heat while it still looks slightly looser than you think it should be.
03 -
  • Don't let the balsamic reduction boil hard, or it will bitter and overly thick instead of syrupy and smooth.
  • If your strawberries aren't as flavorful as you'd hoped, increase the honey slightly and add an extra squeeze of lemon juice—it wakes them up.
